After that we'll head to St. Paul's Catacombs, a network of underground cemeteries dating back to the 3rd century BC. These burial chambers are the earliest evidence of Christianity in Malta. Look out for the two carved circular stone tables, thought to have been used for funerary rites, or for celebrations honouring the dead.The tombs themselves are remarkable, you'll see that some are much grander to reflect the social standing of the occupant. Once we have finished our visit we'll head to a nearby restaurant for a typical lunch prepared with locally sourced ingredients, before finishing the day with a guided tour of fortified Mdina. Its old town, protected by ancient walls and a moat, offers a peek into the Malta of past centuries.

Ciccio says, ‘You might wonder why so many people live on Etna's slopes. The answer is simple – volcanic soil is extremely fertile, and you'll see traditional crops like vines and citrus fruits, plus newcomers such as avocados and papaya growing here.'Make sure you're wearing comfortable walking shoes and warm layers – it gets cold at high altitude. After admiring the views from near the summit, an expert alpine guide will take you to a less exposed 2,500m, where you'll watch the sunset in a more comfortable location.
