Pettorano's polenta is a unique dish in the panorama of Abruzzo cuisine. It is made using cornflour and involving a traditional process: with the help of a wooden stake, the polenta will be stirred in a brass pot for one hour and a half, until it will reach a solid consistency. It will be sliced and topped with a white sauce called "rognoso", made of pecorino cheese and fried bacon.
